Saving multiple output.log's

Hiya, I was wondering if it was possible to NOT overwrite the output.log file. Reasoning is that a few applications I'm working on are tested remotely, and I don't have direct access to the computer. So if something were to go wrong, I wouldn't be able to access the .log file before the application is rebooted the next day. If not, is there a way to make my own custom output file system that would debug the same things to a different file each session? Obviously after a while I would disable this system as to not clog up the harddrive, but it would be very nice for long testruns. Thanks!
